We primarily use a specific muscle called the L.M.C (or Leg of Mutton Cut) which is a cut taken from the beef forequarter. The L.M.C muscle’s grain and texture have all the right characteristics for low and slow cooking; it becomes extremely tender and delicious when slowly braised.
